“Honey will not spoil however is will crystallize over time,” Nastepniak said. “Honey has a higher natural sugar content than it does water content. Therefore, the sugars will clump together or crystallize. The remedy to that is to heat a pan of water until it is warm (not boiling). Remove from heat and place honey bottle-cap removed- in water. Once the honey has returned to a liquid state, place cap on and shake.” Nastepniak recommends storing your honey at room temperature.
